Ingredients

  • 8 medium apples peeled, cored and chopped (about 3½ lb)
  • ¾ to 1 cup water
  • 2 tsp vanilla extract
  • 1 tbsp ground cinnamon or less to taste
  • ¼ cup brown sugar optional

Instructions

  • Add the apples, water, vanilla, cinnamon and brown sugar, if using, to the slow cooker and stir.
  • Cover and cook on LOW for 4–5 hours, until the apples are very soft.
  • Blend with an immersion blender until smooth, or mash with a potato masher for chunky applesauce.
  • Taste and adjust the cinnamon or sugar.
  • Cool and store in jars in the fridge.

Notes

Sugar: adjust to your apples. Sweet varieties need none. I used a mix that included Granny Smith, so I added a little brown sugar.
Too thin: cook uncovered for the last 30–60 minutes.
HIGH setting: 2–3 hours.
Storage: 7–10 days in the fridge or up to 6 months in the freezer.
