  • 2 tbsp olive oil
  • 10 strips of bacon — , cut into small pieces
  • 1 onion — , diced
  • 2 garlic cloves minced or pressed
  • 12 oz mushrooms — , sliced
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme — (dried or fresh)
  • 1/4 cup balsamic vinegar
  • 10 oz spaghetti — ( or other pasta of your choice)
  • 1/2 cup Parmesan cheese + more if you'd like


  1. Bring a large pot of water to a boil.
  2. In a large skillet, heat olive oil. Add bacon and cook over medium heat, until golden for 5-6 minutes. Add onion. Cook for 2-3 minutes, stirring occasionally, until the onion gets translucent.
  3. Add mushrooms and garlic. Add salt, pepper and thyme. Cook for 5 minutes, until mushrooms are softened and have released some water, which is starting to evaporate.
  4. Add balsamic vinegar. Cook for 1-2 more minutes.
  5. Cook pasta according to the instructions on the package. Drain. Reserve 1/2 cup of the cooking water.
  6. In the pot, combine pasta and the sauce. Add the reserved pasta water and parmesan cheese and cook for 2 more minutes.
  7. Garnish with fresh thyme (optional), more salt and pepper (to taste) and serve.
