One Pot Chicken And Rice

One pot Chicken and Rice - easy and delicious meal.

Ingredients

  • 2 tbsp olive oil
  • 6 boneless chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp dried parsley
  • 1 small onion diced
  • 2 cups sliced mushrooms
  • 2 carrots diced
  • 2 cups white rice — (Jasmine is fine)
  • 4 cups chicken stock
  • fresh parsley for garnishing

Instructions

  1. In an oven safe skillet / pan heat olive oil over medium-high heat.
  2. Season chicken with salt, pepper, paprika and parsley. Cook chicken for about 5 minutes per side and then transfer to a plate.
  3. In the same pot sauté onions, carrots and mushrooms for 5 minutes on medium heat, until tender.
  4. Add rice and chicken stock, stir to combine.
  5. Place chicken on top and bake at 400 F for 30-40 minutes, or until rice and chicken are cooked.
