Grilled Greek Lamb Kebabs

For the marinade:
- 2 lb leg of lamb trimmed and cut into 1 1/2-inch cubes
- 1/2 cup olive oil
- juice of 1 lemon
- 3 garlic cloves minced
- 1 onion sliced
- 1 tsp dried oregano
- 1/4 tsp thyme or more to taste
- 1 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley chopped
For skewers:
- 1 –2 red peppers cut into chunks
- 1 onion cut into chunks
Combine all marinade ingredients in a large bowl or zip-top bag. Add the lamb and coat well. Refrigerate for at least 4 hours or up to overnight.
Soak wooden skewers in cold water for 15 minutes.
Preheat grill to medium-high heat (450–500°F / 230–260°C).
Thread lamb, onion, and peppers onto skewers.
Grill for 12–15 minutes, turning once, until cooked to desired doneness.
Serve immediately.
- Trim excess fat to prevent burning
- Do not overcook - lamb becomes tough
- Cook meat and vegetables separately if needed for better control
- Marinate longer for deeper flavor
