Ingredients

  • 3 wild caught mahi mahi fillets
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp paprika smoked works great
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Pinch of cayenne pepper
  • 1 tsp dried oregano
  • 1 tsp cumin
  • 2 tbsp lemon juice

Instructions

  • Preheat a gas grill to medium-high heat (450°F). Combine all spices in a small bowl.
  • Brush mahi mahi fillets with olive oil on both sides. Coat evenly with the spice blend.
  • Grill for 4–5 minutes per side until golden grill marks form and the flesh appears set.
  • Drizzle with lemon juice and serve.

Notes

  • To prevent sticking: clean grill grates well, grease with vegetable oil, and preheat fully before adding the fish.
  • Fish is done when it turns opaque and flakes easily with a fork — internal temp 140°F.
  • Frozen mahi mahi works fine; defrost in the fridge overnight first.
