- 3 wild caught mahi mahi fillets
- 3 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp paprika smoked works great
- 1/2 tsp garlic powder

- 1 tsp dried oregano
- 1 tsp cumin
- 2 tbsp lemon juice
Preheat a gas grill to medium-high heat (450°F). Combine all spices in a small bowl.

- To prevent sticking: clean grill grates well, grease with vegetable oil, and preheat fully before adding the fish.
- Fish is done when it turns opaque and flakes easily with a fork — internal temp 140°F.
- Frozen mahi mahi works fine; defrost in the fridge overnight first.
