Low Carb Chocolate Pancakes

Keto, sugar, gluten and grain free pancakes, made with simple ingredients in under 30 minutes. These are perfect for a sweet breakfast or dessert. Make these if you follow low carb lifestyle or if you have certain food allergies or intolerance to gluten.

Ingredients

  • 2 large eggs
  • 1/4 cup 60 ml almond milk
  • pinch of salt
  • 2 oz 60 grams cream cheese, you could use
  • 1 tsp vanilla extract
  • 1 tsp 5 ml MCT oil (optional)
  • 1/2 cup 50 grams almond flour
  • 2.5 tablespoons 18 grams unsweetened cocoa powder
  • 1 tsp 4 grams baking powder
  • 2 tablespoons 30 grams or less erythritol or other sweetener of your choice
  • 1/4 cup 40 grams chocolate chips (optional)
  • Berries and low-carb syrup for serving
  • Cooking spray for the pan

Instructions

  • Combine the almond milk, eggs, salt and cream cheese in a blender. Pulse a few times until smooth.
  • Add the vanilla extract, MCT oil (optional), almond flour, sweetener, cocoa powder, baking powder and blend to combine.
  • Stir in the chocolate chips.
  • Heat a non stick pan over medium heat.
  • Spray with cooking spray.
  • Pour 1/4 cup (4 tablespoons) of batter to the pan. Cook for 2 minutes, until bubbles start to form on top and then flip.
  • Cook for another 2 minutes on the other side.
  • Serve topped with berries and/or syrup.
