The Best Cucumber Salad Recipe - light, low calorie, simple to make and delicious cucumber salad made with just a few ingredients.

Ingredients

  • 1 large English cucumber
  • 1/2 tsp pink Himalayan salt
  • 1/2 tsp honey optional
  • 1 tbsp apple cider vinegar
  • 3 tbsp olive oil
  • 2 tbsp chopped fresh dill

Instructions

  • In a bowl combine the salt, olive oil and apple cider vinegar. You can also add about 1/2 teaspoon of honey to the dressing, if you'd like.
  • Wash your cucumber and peel (if desired, peeling the cucumber is not mandatory).
  • Slice into very thin slices, using a sharp knife. You can use a mandolin slicer, but  I personally like to slice cucumbers with a knife.
  • Place cucumbers in a colander over a bowl.
  • Sprinkle some salt over the cucumbers and let it sit over them for 5 minutes.
  • Next dry the slices between two paper towels. This is an important step so that your cucumbers don't get soggy.ucumbers
  • Place cucumbers in a bowl.
  • Season with salt, olive oil and apple cider vinegar. Add the dill and stir to combine.
