– 3 large eggs – 1 and 3/4 cups sugar – 1 tsp vanilla extract

– 1 cup vegetable oil – 3 cups all purpose flour – 1/2 tsp salt – 1 tsp baking powder – 1 tsp baking soda – 1 tsp ground cinnamon – 2 cups grated zucchini

1. Preheat oven to 350 F ( 170 C).

2. In a bowl combine the dry ingredients - flour, salt, baking soda, baking powder and cinnamon.

3. Beat eggs and sugar with an electric mixer for 4 minutes, until combined.

4. Add the oil and mix to incorporate.

5. Add the grated zucchini and stir to combine.
