Roasted Radishes




– 2 cups radishes – 1/4 tsp salt – 1/4 black pepper – 3 tbsp olive oil For the dressing: – 1/4 cup olive oil – 1 tbsp lemon juice – 1/8 tsp salt – 1/4 tsp black pepper – 1/4 tsp garlic powder – 1 tsp Dijon mustard – 1 tbsp parsley

Step 1

Preheat oven to 425 F. Prepare a baking sheet or use a cast iron skillet. Wash radishes, trim the ends and cut in half or quarter.

Step 2

Add radishes to the baking dish. Drizzle with olive oil. Add salt and pepper. Bake radishes for 30-40 minutes, until soft, but not watery.

Step 3

Combine all ingredients in a small bowl and whisk to incorporate. Serve with the radishes.
