Low Carb Philly Cheesesteak Skillet

Ingredients

– 2 tbsp olive oil or butter – 1/2 cup sliced onion – 1/4 tsp garlic powder – 1 cup sliced bell peppers – 1 cup mushrooms — optional, but recommended – 1/4 cup chicken or beef broth – 1 1/2 - 2 lb beef — either raw or cooked leftovers – 1/4 tsp paprika — optional – 1/4 tsp black pepper – 1/2 Italian Seasoning — optional – 2/3 cheese

Step 1

 If using raw steak (not leftovers), slice very thin. Season with salt and pepper.

Step 2

Slice the pepper, onions and mushrooms. (1/4-1/8 – inch thick)

Step 3

Heat olive oil in a skillet. Add the onions and cook for 1-2 minutes. Add peppers, mushrooms, salt and cook for 4-5 minutes, until softened and the liquid from the mushrooms has almost  evaporated.

Step 4

 Add the steak – if using raw shaved steak, cook for 2-3 minutes, if using cooked leftover steak, cook for 1 minute. Add the stock. Cook for 1-2 more minutes.

Step 5

 Preheat oven to 375 F.

Step 6

 Top with cheese and bake for 5-7 minutes, until the cheese is melted. Serve.
