Keto  Flax Bread

– 1 cup mozzarella – 1 oz cream cheese – 1 tbsp butter – 1 cup almond flour – 1 tsp baking powder – 1/4 tsp salt – 1/4 cup flax meal – 1/4 cup water – 1 egg – 1/2 tsp Xanthan gum

1. In a bowl combine the mozzarella, cream cheese and butter. Microwave on high for 1 minute to melt (alternatively heat over a double boiler or in a small saucepan directly on the heat to melt).

2. Stir cheeses and butter together.

3. In a separate bowl combine the almond flour, Xanthan gum, salt and baking powder.

4. In a third small bowl combine the egg, flax meal and water. Beat to combine.

5. Preheat oven to 400 F. Line a baking sheet with parchment paper.

6. Combine melted cheeses, almond flour and egg and flax mixture in the bowl of a stand mixer. Beat for 1-2 minutes, until everything is incorporated. You can mix everything together by hand as well.

7. Wet your hands and gather the dough. Divide into 6 parts and roll into balls.

8. Place on the baking sheet and flatten slightly. Top with sesame seeds (optional).

9. Bake for 12 minutes until golden.
