Ingredients

–– 2 medium Apples – 1 small onion — I used red onion – 3-4 pork steaks — bone in pork shoulder steaks, about 4 oz each – Salt and pepper to taste — 1/2 tsp salt and 1/4 tsp black pepper – 1 tbsp olive oil – 2/3 cup chicken stock – 1 tbsp Whole Grain Dijon Mustard — regular Dijon can be used – 1/4 tsp thyme – 1/4 tsp rosemary — optional – 1/4 tsp or more salt – 1/4 tsp black pepper

Step 1

Season both sides of the pork steaks with salt and pepper. Heat a cast iron skillet over medium-high heat. Add 1 tbsp oil.

Step 2

Cook the pork steaks for 3-5 minutes per side, turning once. Remove and transfer to a plate.

Step 3

Add the apples and onions to the pan. Cook for 3-4 minutes, stirring occasionally. Pour the chicken stock and add the mustard to the pan.

Step 4

Season with thyme, rosemary, more salt and pepper. Add the pork chops back to the pan. Preheat your oven to 400 F.

Step 5

Add the pork chops to the oven and bake for 10-12 minutes. Take out of the oven and serve.
