  • 4 boneless skinless chicken thighs — about 3 oz each
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • Paprika — can use 1/2 tsp regular and 1/2 tsp smoked paprika
  • 1/4 tsp ground cumin
  • 1/4 tsp garlic powder or 1 minced garlic clove
  • 1 tsp soy sauce — optional
  • 2 tbsp grape seed or vegetable oil — divided
  • Lemon juice — optional


  1. Trim the chicken thighs from any extra fat.
  2. Season with 1 tablespoon of oil, soy sauce, garlic, cumin, paprika, salt and pepper.
  3. Heat oil in a cast iron skillet over medium high heat on the stove top. Add chicken and cook for 3-4 minutes per side, until golden brown and the internal temperature reaches 165 F.
  4. Drizzle with some lemon juice (optional) and serve.
