Trim the chicken thighs from any extra fat.

Season with 1 tablespoon of oil, soy sauce, garlic, cumin, paprika, salt and pepper.

Heat oil in a cast iron skillet over medium high heat on the stove top. Add chicken and cook for 3-4 minutes per side, until golden brown and the internal temperature reaches 165 F.
