  • 2 lb boneless skinless chicken thighs
  • 1/4 cup olive oil
  • 2 tbsp brown sugar or low-carb brown sweetener
  • 3 tbsp soy sauce — low sodium
  • 2 tbsp lemon juice
  • 1/2 tsp grated fresh ginger
  • 2 garlic cloves — minced or pressed
  • 1 tsp paprika or smoked paprika
  • 1/2 tsp dried oregano
  • 1/8 tsp cayenne pepper or a splash of your favorite hot sauce
  • 1 tsp Dijon mustard
  • 1/4 tsp black pepper


  1. Clean chicken from any extra skin and fat that may have left.
  2. In a bowl combine:  1/4 cup olive oil, 2 tbsp brown sugar or low-carb brown sweetener,  3 tbsp soy sauce — (low sodium), 2 tbsp lemon juice, 1/2 tsp grated fresh ginger, 2 garlic cloves — minced or pressed, 1 tsp paprika or smoked paprika, 1/2 tsp dried oregano, 1/8 tsp cayenne pepper or a splash of your favorite hot sauce, 1 tsp Dijon mustard and 1/4 tsp black pepper for the marinade. Whisk to combine.

  3. Add chicken and cover. Marinate for 30 minutes at room temperature or for up to 6 hours in the fridge. If refrigerating, take out 30 minutes before grilling.
  4. Preheat a gas grill to medium-high (450 F).
  5. Clean the grates.
  6. Place chicken on the grill and grill for 5-6 minutes per side, turning once, until the internal temperature is 165 You can grill to slightly higher temperature 170-175F.

Recipe Notes

You can marinate boneless skinless thighs for 30 minutes - to 2 hours and will get a great flavor or up to 6 hours. I don't recommend marinating for more, because the meat can become tough.
Bone-in Skin-On chicken thighs can be substituted. If you decide to use these, grill for around 10 minutes per side, until the internal temperature of the chicken reaches 165 F. Cooking time will vary depending on the size of the thighs, so keep a close eye on them.
