Easy Cabbage Salad - this is seriously the best, simple, basic cabbage salad recipe, made with shredded cabbage, carrots and tomatoes (optional). Fresh and low-calorie apple cider vinegar dressing makes is light and perfect for summer. This salad goes well with chicken, steak or seafood.

Dressing:
- 1/4 cup apple cider vinegar
- 1/3 cup olive oil
- 1-2 tsp sweetener honey, sugar or low-carb sweetener
- 1 tsp salt
- 1 tsp Dijon mustard optional
- pinch of black pepper optional
For the salad:
- 6 cups shredded cabbage
- 1/4 cup shredded cabbage
- 1/2 cup sliced cucumber
- 1 cup chopped tomatoes
- 2 tbsp chopped fresh dill
Whisk all ingredients for the dressing in a small jar and shake.
In a bowl, combine all ingredients for the salad and pour dressing on top.
Stir and let it sit for 10 min, then serve. You may need to add more salt to season the salad for your taste.
