Smoked Salmon Appetizer With Cucumber (Cucumber Salmon Rolls) - easy to make, healthy, fresh and impressive appetizer made with smoked salmon spread and cucumber sliced into ribbons, rolled together for a fancy look.

Smoked salmon
— Either hot smoked or cold smoked will work, since we are turning it into a spread in the food processor. Use whichever kind you choose

seedless English cucumbers

Combine all ingredients for the spread in a food processor. Pulse until smooth and creamy. Mixture should be thick.

Wash the cucumbers and do not peel.

Using a wide vegetable peeler or a thick knife (more difficult), slice the cucumber into thin, 1/8 inch ribbons lengthwise.

Using paper towels carefully dry the cucumber slices.

Spread cream cheese mixture over the cucumber ribbons, leaving about 1 inch at the end. Roll into roll ups.

Serve immediately or refrigerate for 2-3 hours.
