For the taco cups:
- 12 12-inch flour tortillas
- 1 cup grated cheddar or Mexican blend cheese
- 1 avocado large, cut into small cubes
- 1 cup diced tomatoes
- 1/2 cup sour cream
- 3/4 cup Pace® Salsa Verde
For the turkey (can use ground chicken instead):
- 1 tbsp olive oil
- 1 lb ground turkey breast
- 1 tbsp chili powder
- 1/4 tsp garlic powder
- 1/4 tsp red pepper flakes
- 1/4 tsp oregano
- 1/2 tsp paprika
- 1 tbsp ground cumin
- 1 tsp sea salt
For the turkey (can use ground chicken instead):
Combine all ingredients for the seasoning in a small bowl.
Heat olive oil in a skillet over medium-high heat.
Add ground turkey and seasoning. Using a wooden spoon or a spatula break meat into large and then small pieces. Cook for 5-7 minutes, until cooked through.
For the taco cups:
Preheat oven to 350F. Spray a muffin tin with cooking spray. Using a 3 1/2-inc or 4-inch round cookie cutter, cut out 24 rounds from the tortillas (2 rounds per tortilla).Place rounds in the muffin cavities and press own. Top with 1 tbsp ground turkey and 1 tbsp grated cheese.Bake for 10 minutes, until cheese is melted.Remove from the oven and let them cool for 5 minutes. Using a fork, carefully remove cups from the muffin tin. Place on a plate or party platter.Top with copped avocado, tomatoes, sour cream and Pace® Salsa Verde
