Spiralized Cucumber Salad With Tomatoes And Feta - a fun twist on a popular tomato-cucumber salad, using spiralized cucumber noodles.
Cucumber zoodles, aka veggie noodles, on a fork in a bowl of tomato spiralized cucumber feta salad. Sprinkled with sumac. Greek Style Cucumber Noodles.

Ingredients

  • 1 English cucumber, seedless — large, peeled, spiralized
  • 1 cup cherry tomatoes
  • 2 tbsp green onions — chopped
  • 2 oz feta cheese — cut into cubes
  • 1/2 tsp sumac
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 2 tsp apple cider vinegar
  • 1/2 tbsp chopped parsley — for garnishing

Instructions

  1. Spiralize cucumber, using a spiralizer, or chop with a knife. Place in a bowl.

  2. Cut cherry tomatoes in half. Add to the bowl.


  3. Add olive oil, vinegar and salt. Top with green onion and add feta. Sprinkle sumac over feta. Garnish with parsley.
