  • 20 sweet mini peppers
  • 2 large eggs
  • 10 oz feta cheese — (if it is too salty, soak in cold water for 1 hour before using)
  • 1/8 tsp black pepper
  • 1/4 tsp paprika
  • 1/2 tsp garlic powder
  • 1 tbsp chopped parsley
  • 1/4 cup shredded mozzarella cheese — (optional)


  1. Preheat oven to 400F.
  2. Line a baking sheet with parchment paper.
  3. Wash peppers, cut in half and remove seeds.
  4. In a bowl, combine eggs, feta, pepper, paprika, garlic powder, parsley. Mix to combine. Fill
  5. peppers with mixture, then sprinkle shredded cheese on top.
  6. Bake for 10-15 minutes, until the filling is cooked (keep an eye on them). Broil for 2 minutes, to create nice browning on top. Serve warm.
