Mediterranean Seven Layer Dip With Hummus

Ingredients

  • 8-12 ounces hummus (homemade or store bought)
  • 3 large roasted red peppers , chopped
  • 1 large English cucumber , peeled and chopped
  • 1 cup pitted kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1 cup grape tomatoes , cut in half
  • 1/2 medium red onion , chopped
  • 2 tbsp fresh chopped dill

For serving:

  • pita bread (or any bread), pita chips

Instructions

  • In a 8x8 inch Pyrex dish spread a layer of hummus.
  • Top with layer of roasted red peppers, cucumbers, olives and feta cheese. Add tomatoes and top with onions and dill.
  • Serve immediately or cover with plastic wrap and keep refrigerated for up to 2 days.
