Ingredients

  • 1 box Barilla Pronto Penne pasta (12 oz/340g)
  • 3 cups water (or you can substitute 2 cups water + 1 cup chicken stock)
  • 1 lb chicken breast , chopped into 1/2 inch cubes
  • 1 tsp dried oregano
  • salt and black pepper to taste (I used 1 tsp salt and 1/4 tsp black pepper)
  • 1 jar Barilla Marinara Sauce (12 oz)
  • 4 oz reduced fat cream cheese
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups spinach (packed)
  • 1/2 cup grated Parmesan cheese

Instructions

  • In a deep pot (or Dutch oven) combine pasta, water and chicken. Add oregano and pinch of salt . Water needs to cover the pasta.
  • Turn burner on high and cook for 10 minutes, stirring frequently. Cook for a few additional minutes, if the water has not been absorbed and chicken has not been fully cooked.
  • Remove from heat and add sauce, cream cheese, more salt, pepper, red pepper flakes and oregano. Stir so the cream cheese and sauce can incorporate. Add spinach. Cook for 1-2 more minutes.
  • Remove from heat and add Parmesan cheese on top. Taste and add more salt if needed. Serve.
