Gluten free coconut chocolate banana protein bread.

  • 2 cups whole wheat oat flour
  • 1 cup unsweetened flaked coconut
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup (chocolate) protein powder
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 medium ripe mashed bananas
  • 2 large eggs
  • 1/4 cup coconut milk — (can use 2 % milk)
  • 2 tsp vanilla extract
  • 1/4 cup agave nectar
  • 1/4 cup dark chocolate chips


  1. Preheat oven to 350 F.
  2. In a bowl mix together flour, salt, baking soda, coconut flakes and protein powder.
  3. In a different bowl mix eggs, vanilla extract, milk, agave nectar and mashed bananas.
  4. Add wet to dry ingredients and carefully mix together.
  5. Fold in chocolate chips.
  6. Bake in a greased or covered with parchment paper loaf pan for 35 - 40 minutes. Bread is ready when a tooth pick inserted comes out clean.
  7. Make sure bread has cooled to room temperature before you take it out of the pan.
  8. Keep bread wrapped in plastic wrap in the fridge for a week.
