This fresh green and purple cabbage salad is light and full of flavor.

Finely slice both kinds of cabbage, a mandolin slicer works fine.

Then chop cucumbers and grate carrots.

Combine vegetables in a large bowl. Combine all ingredients for the dressing and stir.
