Sweet and moist cream cheese filled banana bread with coconut oil

  • Banana bread:
  • 2 medium over ripe mashed bananas
  • 2 cups flour
  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 2 medium eggs at room temperature
  • 1/2 cup coconut oil melted but not too hot
  • 1 tsp baking soda
  • 4 tbsp greek yogurt
  • 1/2 tsp salt
  • Cream cheese layer:
  • 8 oz softened cream cheese — (low fat if possible)
  • 1/3 cup sugar
  • 1 tbsp flour
  • 1 medium egg at room temperature
  • 1 tsp vanilla extract


  1. Preheat oven to 350 F (180 C). Grease and flour one 9''x5'' loaf pan.
  2. In the bowl of a stand mixer beat eggs, coconut oil, white sugar and brown sugar until creamy.
  3. Dissolve baking soda in greek yogurt and add to the egg mixture. Add mashed bananas, flour and salt. Mix until just combined.
  4. To prepare the cream cheese layer mix cream cheese, sugar vanilla and flour. Add egg and beat until incorporated.
  5. Pour 1/2 of banana batter into loaf pan. Spread cream cheese layer on top. Cover with remaining banana batter.
  6. Bake on 350 F (180 C) for 1 hour. Turn oven off but leave bread inside pan for 10 extra minutes.
  7. Transfer co a cooling rack and let it cool completely to a room temperature 91 (1 hour).
  8. Slice and enjoy!
  9. I recommend that you store this bread wrapped in plastic wrap in the fridge for 3-4 days.

Recipe Notes

Baking time is tricky! Baking time can vary! Cream cheese never gets solid and the toothpick test is not 100 % accurate. Baking time will vary depending on moisture content of bananas, cream cheese, pan, oven variances, so please watch the bread not the pan. Please watch the bread, even if you need to bake it for longer time. I did bake one large loaf for 50 minutes and it worked fine, but please check with toothpick to make sure the bread part is cooked through and toothpick comes out clean, with a few moist crumbs on it. I can not guarantee that 50 minutes will be enough baking time in each situation (sorry ).
