Cheesy Horn Rolls With Greek Yogurt And Feta
These horn rolls with Greek yogurt and feta cheese are flakey, cheesy and very easy to make. Crispy on the outside, buttery, they make a great treat for breakfast or brunch. They can also be used as bread substitute.

- 1 cup plain greek yogurt
- 1 tsp baking soda
- 7 oz shredded feta cheese
- 7 oz shredded swiss cheese (mozzarella, cheddar or gouda will work)
- 4 cups all purpose flour
- 6 oz (3/4 cup, 170gr ) unsalted butter at room temperature, cut into small pieces
In a small bowl combine baking soda and yogurt and set a side.
You can use a kitchen aid mixer or mix dough in a large bowl. I usually use my stand mixer, but note that the dough is very thick.
In the bowl of a stand mixer mix together yogurt and soda, cheeses and flour until everything gets evenly distributed.
Mixing on low speed, add butter. Knead for 3-5 minutes.
Form a ball from the dough and wrap it in plastic wrap and refrigerate for 1 hour.
Preheat oven to 350 F (175 C). Line baking pan with parchment paper or silpat.
Dust working surface with some flour. Cut dough into 4-6 pieces (of equal size) and form balls.
Roll each ball into a 10-12 inch circle (5mm thick). Cut each circle into 8 triangles. Roll each one from large end to the small one.
Transfer to baking sheet and bake for 20-22 minutes, until golden.
Let horn rolls cool to room temperature.
