These horn rolls with Greek yogurt and feta cheese are flakey, cheesy and very easy to make. Crispy on the outside, buttery, they make a great treat for breakfast or brunch. They can also be used as bread substitute.

  • 1 cup plain greek yogurt
  • 1 tsp baking soda
  • 7 oz shredded feta cheese
  • 7 oz shredded swiss cheese — (mozzarella, cheddar or gouda will work)
  • 4 cups all purpose flour
  • 6 oz (3/4 cup, 170gr ) unsalted butter at room temperature, cut into small pieces

  1. In a small bowl combine baking soda and yogurt and set a side.
  2. You can use a kitchen aid mixer or mix dough in a large bowl. I usually use my stand mixer, but note that the dough is very thick.
  3. In the bowl of a stand mixer mix together yogurt and soda, cheeses and flour until everything gets evenly distributed.
  4. Mixing on low speed, add butter. Knead for 3-5 minutes.
  5. Form a ball from the dough and wrap it in plastic wrap and refrigerate for 1 hour.
  6. Preheat oven to 350 F (175 C). Line baking pan with parchment paper or silpat.
  7. Dust working surface with some flour. Cut dough into 4-6 pieces (of equal size) and form balls.
  8. Roll each ball into a 10-12 inch circle (5mm thick). Cut each circle into 8 triangles. Roll each one from large end to the small one.
  9. Transfer to baking sheet and bake for 20-22 minutes, until golden.
  10. Let horn rolls cool to room temperature.
