Greek Inspired Salad With Shrimp

A delicious, light Greek inspired salad with shrimp. A combination of Artisan Lettuce, cherry tomatoes, peppers, onions and feta, topped with sautéed shrimp.

  • 4 cups chopped lettuce — (I used Artisan)
  • 1 medium English cucumber
  • 1 and 1/2 cups cherry tomatoes cut in half
  • 2 medium bell peppers thinly sliced — (or 6 mini bell peppers)
  • 1/2 large red onion — (1 small) sliced
  • 1/2 cup crumbled feta cheese


  • 1 lb (500 gr raw shrimp)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp lemon juice


  • 1/2 cup olive oil
  • 3 tbsp red wine vinegar
  • 1/4 tsp oregano
  • 1/8 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 and 1/2 tsp Dijon mustard
  • 1/2 tsp Maple syrup — (sugar)


  1. Preheat a medium stillet to medium and add some olive oil. Wash and dry shrimp with kitchen paper. Season with salt and pepper. Cook shrimp for 3-4 minutes until pink, turning once. Once done, add lemon juice. Do not overcook the shrimp.
  2. Wash and dry vegetables. Chop lettuce, slice peppers, onions and tomatoes.
  3. Add salad ingredients and to a bowl.
  4. Top with cooked shrimp.
  5. Dressing: Combine all ingredients in a resealable jar and shake well. Pour over salad and toss.
  6. Top salad with feta cheese.

Recipe Notes

Dressing is not mandatory. Olive oil, balsamic vinegar, salt and pepper will be great to dress this salad.
