Ingredients

For the burgers:

  • 4 roasted garlic and quinoa burgers from MorningStar Farms — (one pack)
  • 4 burger buns — , cut in half
  • lettuce of your choice for serving — (I used arugula)
  • 1 large tomato — , sliced into rounds
  • 4 onion rounds

For the salad:

  • 8-10 (1/2 pound) mini cucumbers, cut into rounds
  • 1 tbsp chopped dill
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • 1/2 tsp salt
  • pinch of cayenne pepper — (optional)

Instructions

For the burgers:

  1. Preheat gas grill to medium (no more than 400 F). Clean grates. Place burgers on the grill and cook 3-4 minutes per side, flipping once, until the internal temperature has reached 165 F. (Cooking time may vary. Alternatively - cook on the stove top or in the microwave).
  2. Warm up burger buns on the grill.
  3. Serve burgers with lettuce, tomatoes, onions and a side of cucumber salad.

For the salad:

  1. In a deep bowl, combine cucumbers, dill, vinegar, olive oil and salt. Toss to combine. Add a pinch of cayenne pepper (optional).
