Ingredients

  • 1 pound thick asparagus , peeled and ends trimmed
  • olive oil spray (if concerned about using olive oil for grilled veggies, use grapeseed oil or any vegetable oil)
  • salt and pepper to taste

For the Dijon Mustard Vinaigrette:

  • 1 tbsp Dijon mustard
  • 3 tbsp Bragg's Organic Apple Cider Vinegar
  • 1 small shallot , chopped (or 1/2 small red onion, chopped)
  • 4 tbsp olive oil
  • salt and pepper to taste
  • 1 tbsp fresh chopped parsley

Instructions

For the asparagus:

  • Preheat gas grill to 400 F (medium heat).
  • Spray asparagus with olive oil (other oil of your choice), season with salt and pepper. Grill asparagus for 4-5 minutes, turning once, until they are tender. Grilling time may vary, keep an eye on the grill.

For the Dijon mustard vinaigrette:

  • Combine all ingredients in a small bowl (jar). Taste and adjust the taste if needed. If the vinaigrette is too tart, you cal always add a pinch of sugar to it.

To serve:

  • Serve asparagus on a plate with the vinaigrette. Make soft boiled eggs to accompany the dish, if you'd like. You can use this recipe.
