Ingredients

For the crepes:

For the vanilla bean filling:

  • 1 cup heavy cream
  • 8 oz softened cream cheese or mascarpone
  • 1/3 cup sugar
  • 2 tsp vanilla bean paste — (I used The Singing Dog Vanilla Bean Paste)
  • 1 tsp instant coffee dissolved into 1 tbsp warm water

Other:

  • cocoa powder for dusting
  • chocolate sauce or Nutella for drizzling
  • fresh strawberries

Instructions

  1. Prepare crepes.

For the filling:

  1. Beat heavy cream and sugar with a mixer until stiff peaks form.
  2. Fold in the cream cheese/mascarpone. Add vanilla bean paste and coffee, stir to combine.

To serve:

  1. Spread generous amount of filling onto each crepe. Dust with cocoa powder and fold. Dust with more cocoa powder, drizzle with chocolate sauce/Nutella and serve.
