Miso Salmon With Cold Marinated Asparagus Recipe - simple Asian flavors in this delicious and elegant dish.

Ingredients

For the salmon:

  • 2 (6-8 oz ) salmon fillets, skin removed
  • 1 tbsp white miso paste
  • 1 tbsp mirin
  • 1/2 tsp Sriracha
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil

For the asparagus:

  • 1 pound asparagus , trimmed and peeled
  • 2 tbsp soy sauce
  • 1 1/2 tbsp rice wine vinegar
  • 2 tbsp sesame oil
  • 1 tsp fresh grated ginger
  • 1/2 tbsp toasted sesame seeds

Instructions

  • In a bowl combine all ingredients for the marinade and whisk to combine. Add salmon and make sure all sides are coated in marinade. Refrigerate for 15 minutes.

To cook on the grill:

  • Preheat gas grill to medium-high heat. (450F). Clean grates (they need to be extremely clean, to prevent sticking).
  • Cook for 3-4 minutes per side. Do not try to flip it earlier, because it will stick and fall apart.

To cook on the stove top:

  • Lightly coat a non-stick skillet with vegetable oil. Preheat to medium heat. Cook salmon for 2-3 minutes per side (or more if needed).

For the asparagus:

  • You can shave asparagus or cut them in half.
  • Combine all ingredients for the marinade in a bowl. Add asparagus and toss to coat. Let them marinade for 10 minutes.
  • Serve salmon over asparagus. Sprinkle some toasted sesame seeds.
