Salad With Grapes And Cheese - simple to make, with the perfect balance of sweet and savory, this salad is fresh and delicious. Can be made year round, but it is just great for spring and summer.

Salad:
- 6 cups mixed greens
- 12 oz 180 grams Grapes - could use different varieties red and green, preferably seedless, cut in half
- 3 oz Blue cheese crumbled
- 3 oz Cheddar cheese chopped
- 1/3 cup Caramelized Walnuts or just toasted walnuts
- Optional - dried cherries or cranberries
Dressing:
- Honey Balsamic Vinaigrette
- 1/4 cup Olive oil
- 2 tsp Honey
- 1/4 tsp Salt or more to taste
- 1/8 tsp Black pepper
- 2 tbsp Balsamic vinegar
Salad:
Use store bought caramelized walnuts, or just toasted walnuts (alternatively toast them on the stove top).
Place the lettuce (mixed greens) in a large bowl. Add the walnuts, cheesed and grapes. Use dried cranberries or cherries (optional).
Drizzle the dressing and toss to combine. Serve right away.
Store any leftovers in an airtight container in the fridge for up to 1 day.
