Keto Cabbage Salad

Keto cabbage salad recipe - creamy mayo based dressing over tender, thinly shaved cabbage, cucumbers and radishes.

Ingredients

  • 10 cups cabbage I used 1/2 green and 1/2 purple
  • 1 cup chopped cucumbers
  • 1 cup sliced radishes
  • 1 1/2 cups mayonnaise
  • 2 tablespoons sour cream optional
  • 1 tsp Dijon Mustard
  • 1 tablespoon apple cider vinegar
  • 2 tsp salt or more to taste
  • 1/4 tsp black pepper

Instructions

  • Add cabbage to a large bowl. Sprinkle 1 tsp salt and using your hands press the cabbage to soften.
  • Then add in the cucumber and radish.
  • In a small bowl combine the mayo, sour cream, mustard, salt, pepper and vinegar and whisk to combine.
  • Add the dressing to the salad and stir to evenly coat .
  • Let the salad sit for 30 minutes, then serve.
  • Keep in the fridge in an air tight container for up to 2 days.
