Baked Split Chicken Breast Recipe

Ingredients

  • 1 14-16 oz bone in skin on chicken breast
  • 3 tbsp olive oil divided
  • 1 tbsp butter
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp thyme
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • optional for serving:
  • lemon juice
  • fresh parsley or cilantro for garnishing

Instructions

  • Preheat oven to 400 F.
  • Drizzle olive oil over both sides of the chicken breast. Season with salt, pepper, paprika, garlic powder and thyme.
  • Heat 1 tsp of olive oil in a cast iron skillet over medium heat. Add Butter.
  • Add the chicken, skin side down. Cook for 5 minutes, without trying to move the chicken.
  • Turn and place in the oven.
  • Bake for 15-20 minutes, until a thermometer inserted into the thickest part of the meat, without touching the bone reads 165 F.
  • Take out of the oven, let the meat rest for 5 -10 minutes, then slice.
