Strawberry Spinach Salad Recipe
Strawberry Spinach Salad - light, healthy, easy to make and delicious salad made with just a few simple ingredients. Perfect for year round, to make for lunch or take to potlucks and parties. Made with baby spinach, strawberries, crunchy walnuts, blue cheese (optional) and sweet poppyseed dressing.

For the salad:
- 12 oz baby spinach
- 12 oz sliced strawberries
- 1 cup walnuts
- 1/2 cup crumbled feta or blue cheese
For the light balsamic vinaigrette dressing: (Use either dressing, nutritional info does not include the dressing)
- 1/4 cup olive oil
- 3 tbsp light balsamic vinegar
- 2 tsp honey or low-cab sweetener
- 1 tsp Dijon mustard
- 1/4 tsp salt
- pinch of black pepper
For the poppyseed dressing: (Use either dressing, nutritional info does not include the dressing)
- 1/2 cup olive oil can swap some of it with MCT oil for Keto
- 1/4 cup apple cider vinegar
- 1/4 cup honey sugar or low-carb sweetener
- 1 tsp Dijon mustard
- 1/8 tsp salt
- 1 tbsp poppy seeds
Prepare dressings (use the one you prefer) by placing in a jar, closing the lid and shaking until smooth.
Toss salad ingredients in a bowl with the dressing of your choice.
Toast nuts in a skillet over medium-low heat until crunchy for 5-7 minutes, stirring frequently.
