Option one: Cut into small florets, place on a baking sheet, season with salt and pepper, drizzle with 1 tbsp of olive oil and bake at 425 F for 20 minutes.
Option two: Bring a large pot of salted water to a boil. Add cauliflower and cook for 5 min. Drain, rinse with cold water and drain well.
In a saucepan, combine cream cheese and heavy cream, heat on medium-low heat, stirring to melt and dissolve the cream cheese. Add salt, black pepper, garlic powder, paprika. Add sour cream.
Grease a 9x13 or smaller casserole dish. Add cauliflower. Pour the sauce on top. Add 1/2 of the bacon (chopped). Add 1/3 cod the cheese and stir. Top with the remaining cheese.
Bake for 20-30 minutes at 350 F, until the cheese melts.
Top with bacon and green onions.
