Ingredients

  • 1 lb boneless skinless chicken thighs cut into small pieces
  • 1 lb Brussels sprouts — shaved in a food processor
  • 1 shallot — diced
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp chopped parsley

Instructions

  1. Heat oil in a large skillet. Add chicken pieces. Season with half of the salt and black pepper. Cook for 2 minutes per side. Add shallot, cook for 1 minute.

  2. Add shaved Brussels sprouts. Cook for 15-20 minutes, stirring frequently, until tender. Season with salt, pepper and paprika. Cook for 2-3 more minutes.

  3. Garnish with parsley and serve.
