Ingredients

  • 1 large onion — diced
  • 3 cloves garlic — pressed
  • 2 sweet potatoes — about 3 cups diced
  • 1 tbsp vegetable oil
  • 1 can Hunt's® diced tomatoes — 14.5 oz/411 grams
  • 2 1/2 cups brown lentils
  • 2 tsp chili powder — or more to taste
  • 2 tsp paprika
  • 1/4 tsp cayenne pepper — optional
  • 2 tsp cumin
  • 1 tsp salt — or more to taste
  • 1/4 tsp black pepper — or more to taste
  • 3 cups vegetable stock
  • 1 small jalapeno peppers — chopped
  • fresh cilantro — fo garnishing

Instructions

  1. Add all ingredients to a crock pot. 

  2. Cook for at least 8 hours on low, or 5 hours on high. The recipe makes a huge batch, so additional cooking time may be required.

  3. Garnish with fresh cilantro and sliced jalapeños (optional).

Recipe Notes

You can add up to 1/2 can of extra tomatoes, depending on the taste you prefer.
