FOR THE DONUTS:
- 1 cup almond meal (no need to be sifted)
- 1/4 tsp baking soda
- 1/4 cup maple syrup
- 2 tbsp melted coconut oil
- 2 large eggs
- 3 tsp vanilla bean paste (can substitute with 2 tsp vanilla extract)
FOR THE GLAZE:
- 1/2 cup dried hibiscus petals
- 2 cups water
- 1/2 cup unrefined sugar
FOR THE DONUTS:
Preheat oven to 350F.
Generously grease a 6-mold donut pan with cooking spray or coconut oil.
In a bowl whisk eggs, maple syrup, coconut oil and vanilla bean paste. Add almond meal and baking soda and mix until combined.
Divide mixture between 6 donut molds.
Bake donuts for 10-14 minutes, until golden.
Allow them to cool for 10 minutes inside the pan, then carefully take them out. Let them cool at room temperature.
FOR THE GLAZE:
Bring 2 cups water to a boil. Add sugar, cook for 5 minutes.
Add hibiscus petals. Cook for 4-5 more minutes. Turn off the heat and cover. Let the mixture cool for 10 minutes, then strain. Let the glaze cool completely, it will thickens.
Drizzle glaze over donuts. Serve or keep in the fridge for up to 3 days.
