ARUGULA TUNA BEET SALAD

Ingredients

FOR THE SALAD:

  • 4 cups arugula
  • 1 large carrot , grated (1/2 cup)
  • 2 small beets , grated (3/4 cup)
  • 1 can (5 oz) Wild Selections® Solid White Albacore Tuna in Olive Oil

FOR THE DRESSING:

  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 2 tsp apple cider vinegar
  • 1 /2 tsp Dijon mustard
  • 1 tsp honey
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

FOR THE DRESSING:

  • Place all ingredients in a small jar and close with a lid. Shake well.

FOR THE SALAD:

  • Divide all ingredients equally between two salad bowls. Pour dressing on top of each salad.
  • Serve.
