Brussels Sprouts Salad With Cranberry Orange Vinaigrette
This brussels sprouts salad with cranberry vinaigrette is light, nutritious and packed with healthy super foods. The creamy homemade cranberry orange vinaigrette is the perfect addition to any fall/winter salad.

Salad:
- 2 cups chopped brussels sprouts (leave stems out)
- 1/4 cup dries cranberries
- 1/4 cup chopped toasted pistachios
- 1/4 cup cooked quinoa
- 1 tbsp chia seeds (optional)
Cranberry Orange Vinaigrette Dressing:
- 1/2 cup fresh squeezed orange juice
- 1/4 cup apple cider vinegar
- 1 tbsp cranberry sauce
- 1/2 tbsp Dijon mustard
- 1/4 tsp salt (or more to taste)
- 1/4 tsp black pepper
- 1/2 cup olive oil
For the dressing: In a blender combine 1/2 cup orange juice, 1/4 cup vinegar, 1 tbsp cranberry sauce, 1/2 tsp Dijon mustard, 1/4 tsp salt, 1/4 tsp black pepper and blend until combined. Gradually add in 1/2 cup olive oil and blend on low until creamy.
For the salad: Wash brussels sprouts and chop, leaving the stems out.
In a bowl place chopped brussels sprouts, cranberries, quinoa, pistachios and top with chia seeds. Pour dressing and toss.
