This brussels sprouts salad with cranberry vinaigrette is light, nutritious and packed with healthy super foods. The creamy homemade cranberry orange vinaigrette is the perfect addition to any fall/winter salad.

Ingredients

Salad:

  • 2 cups chopped brussels sprouts — (leave stems out)
  • 1/4 cup dries cranberries
  • 1/4 cup chopped toasted pistachios
  • 1/4 cup cooked quinoa
  • 1 tbsp chia seeds — (optional)

Cranberry Orange Vinaigrette Dressing:

  • 1/2 cup fresh squeezed orange juice
  • 1/4 cup apple cider vinegar
  • 1 tbsp cranberry sauce
  • 1/2 tbsp Dijon mustard
  • 1/4 tsp salt — (or more to taste)
  • 1/4 tsp black pepper
  • 1/2 cup olive oil

Instructions

  1. For the dressing: In a blender combine 1/2 cup orange juice, 1/4 cup vinegar, 1 tbsp cranberry sauce, 1/2 tsp Dijon mustard, 1/4 tsp salt, 1/4 tsp black pepper and blend until combined. Gradually add in 1/2 cup olive oil and blend on low until creamy.
  2. For the salad: Wash brussels sprouts and chop, leaving the stems out.
  3. In a bowl place chopped brussels sprouts, cranberries, quinoa, pistachios and top with chia seeds. Pour dressing and toss.
  4. Enjoy!
