Greek Inspired Salad With Shrimp

A delicious, light Greek inspired salad with shrimp. A combination of Artisan Lettuce, cherry tomatoes, peppers, onions and feta, topped with sautéed shrimp.

Ingredients

FOR THE SALAD:

  • 4 cups chopped lettuce (I used Artisan)
  • 1 medium English cucumber
  • 1 and 1/2 cups cherry tomatoes cut in half
  • 2 medium bell peppers thinly sliced (or 6 mini bell peppers)
  • 1/2 large red onion (1 small) sliced
  • 1/2 cup crumbled feta cheese

SHRIMP:

  • 1 lb (500 gr raw shrimp)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp lemon juice

FOR THE DRESSING:

  • 1/2 cup olive oil
  • 3 tbsp red wine vinegar
  • 1/4 tsp oregano
  • 1/8 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 and 1/2 tsp Dijon mustard
  • 1/2 tsp Maple syrup (sugar)

Instructions

  • Preheat a medium stillet to medium and add some olive oil. Wash and dry shrimp with kitchen paper. Season with salt and pepper. Cook shrimp for 3-4 minutes until pink, turning once. Once done, add lemon juice. Do not overcook the shrimp.
  • Wash and dry vegetables. Chop lettuce, slice peppers, onions and tomatoes.
  • Add salad ingredients and to a bowl.
  • Top with cooked shrimp.
  • Dressing: Combine all ingredients in a resealable jar and shake well. Pour over salad and toss.
  • Top salad with feta cheese.

Notes

Dressing is not mandatory. Olive oil, balsamic vinegar, salt and pepper will be great to dress this salad.
