Ingredients

For the salad:

  • 2 cups arugula , washed
  • 2 mini cucumbers , sliced into rounds ( or 1/3 English cucumber, chopped)
  • 4 oz smoked salmon
  • 2 small sun dried tomatoes , chopped
  • 1-2 tsp capers
  • 1 tsp toasted sesame seeds

For the dressing:

  • juice from 1 lime (vinegar of your choice could be used)
  • 2 tbsp olive oil (or more to taste)
  • salt and pepper to taste

Instructions

  • Place arugula in a salad bowl. Top with salmon, cucumbers, sun dried tomatoes and capers. Add sesame seeds.
  • Drizzle olive oil, lime juice and add salt and pepper. Toss to combine. Add more salt and pepper (olive oil and lime juice), if needed. Serve.
