Ingredients

For the salad:

  • 4 cups chopped romaine lettuce
  • 2 medium tomatoes — , chopped
  • 1/2 English cucumber — , chopped
  • 1 can — (15 oz) white beans, drained
  • 1/2 medium red onion — , diced
  • 2 roasted red peppers — , chopped (fire roasted peppers are perfect)

For the dressing:

  • 1/2 cup olive or vegetable oil
  • 1/4 cup apple cider vinegar
  • 1 tsp salt
  • 1 tsp honey

Other:

  • freshly ground black pepper

Instructions

  1. In a large bowl place lettuce, cucumbers, tomatoes, peppers, beans and onions.
  2. In a jar, combine oil, vinegar, salt and honey. Shake well.
  3. Pour dressing over salad.
  4. Add some freshly ground black pepper on top.
