Season shrimp with taco seasoning, lime juice, salt and olive oil.Cook in a pan over medium heat for 3-4 minutes per side. Then remove prom heat and when it cools down a little mix in with mayonnaise.
To make guacamole- mash avocado with fork, add onion, jalapeño pepper, lemon juice, salt and cilantro and mix together.
Season cabbage with salt and lime juice.
Warm tortillas in a skillet over medium to low heat. Cover with a clean towel until ready to use.
To assemble the tacos: Put a spoonful of shrimp over each tortilla. Then add a spoon of guacamole. Add cabbage. Top with shredded cheese, diced tomatoes,sour cream, some cilantro leaves and drizzle with a few drops of lime juice.
Notes
To Prepare the Chipotle Mayonnaise: In a blender (food processor) combine the mayo, chipotle peppers, Adobo sauce, salt, pepper and lime juice. Blend until smooth.
