- 1 cup mashed ripe bananas (2 medium or 3 small bananas)
- 1 tsp vanilla extract
- 1 egg
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1 tsp unsweetened cocoa powder
- 1/2 tsp salt
- 2/3 cup sugar
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 2/3 cups flour
- 1/4 cup chocolate chips
Preheat oven to 350F (175C)
You can use electric mixer or mix ingredients in a bowl by hand. In a bowl mash bananas with a fork. Add vanilla and the egg and mix well. Add oil and milk and stir to combine. Add sugar and stir again.
Add cocoa powder and mix until it is completely incorporated. Ad salt, baking soda and baking powder. Add flour. Mix just until combined.
Pour batter into paper lined muffin cups, about 3/4 full. Sprinkle with chocolate chips. Bake for 18-20 minutes on 350F (175C) until toothpick inserted comes out clean and muffin tops appear baked.
Remove from oven and let them sit in muffin tin for 5-7 minutes, then remove them and set on a baking rack. Serve at room temperature.
