For the Dijon Mustard Vinaigrette:
1tbspDijon mustard
3tbspBragg's Organic Apple Cider Vinegar
1small shallot, chopped (or 1/2 small red onion, chopped)
4tbspolive oil
salt and pepper to taste
1tbspfresh chopped parsley
Instructions
For the asparagus:
Preheat gas grill to 400 F (medium heat).
Spray asparagus with olive oil (other oil of your choice), season with salt and pepper. Grill asparagus for 4-5 minutes, turning once, until they are tender. Grilling time may vary, keep an eye on the grill.
For the Dijon mustard vinaigrette:
Combine all ingredients in a small bowl (jar). Taste and adjust the taste if needed. If the vinaigrette is too tart, you cal always add a pinch of sugar to it.
To serve:
Serve asparagus on a plate with the vinaigrette. Make soft boiled eggs to accompany the dish, if you'd like. You can use this recipe.
