Ingredients
For the blackened chicken:
2 8ozboneless skinless chicken breasts
1tspsmoked paprika
1tspgarlic powder
1tsponion powder
1tsporegano
½tspground cumin
½tspsalt
1tspblack pepper
¼tspcayenne pepper
2tbspcanola oil
For the salad:
4cupsbaby spinach
1/2small red onion, thinly sliced
1/4cupblueberries
1/4cupBlue Diamond All Natural Almonds
1/3lbcooked asparagus
1/4cupcrumbled feta cheese(optional)
For the dressing:
¼cupolive oil
1tbspapple cider vinegar
2tsphoney
1tspDijon mustard
¼tspsalt
¼tspblack pepper
1/4tsporegano
Instructions
For the chicken:
In a small bowl combine all spices for the seasoning. Rub chicken breasts on all sides. Drizzle with oil.
Preheat a gas grill to medium-high heat. Clean grates.
Grill chicken for 4-5 minutes per side, until the temperature of the meat reaches 165F. Remove from the grill and let it rest for 3-4 minutes, then slice.
For the dressing:
Combine all ingredients for the dressing in a small jar, close the lid and shake.
For the salad:
Place spinach on a platter. Add blueberries, onions, asparagus, feta and chicken. Add almonds. Pour dressing on top and serve.
