The Best Cucumber Salad

Ingredients

– 1 large English cucumber – 1/2 tsp pink Himalayan salt – 1/2 tsp honey — optional – 1 tbsp apple cider vinegar – 3 tbsp olive oil – 2 tbsp chopped fresh dill

1. In a bowl combine the salt, olive oil and apple cider vinegar. You can also add about 1/2 teaspoon of honey to the dressing, if you'd like.

2. Wash your cucumber and peel (if desired, peeling the cucumber is not mandatory).

3. Slice into very thin slices, using a sharp knife. You can use a mandolin slicer, but  I personally like to slice cucumbers with a knife.

4. Place cucumbers in a colander over a bowl.

5. Sprinkle some salt over the cucumbers and let it sit over them for 5 minutes.

6. Next dry the slices between two paper towels. This is an important step so that your cucumbers don't get soggy.ucumbers

7. Place cucumbers in a bowl.

8. Season with salt, olive oil and apple cider vinegar. Add the dill and stir to combine.
