The Best  Cucumber Salad

– 1 large English cucumber – 1/2 tsp pink Himalayan salt – 1/2 tsp honey — optional – 1 tbsp apple cider vinegar – 3 tbsp olive oil – 2 tbsp chopped fresh dill

Step 1

 In a bowl combine the salt, olive oil and apple cider vinegar. You can also add about 1/2 teaspoon of honey to the dressing, if you'd like.

Step 2

Wash your cucumber and peel (if desired, peeling the cucumber is not mandatory).

Step 3

Slice into very thin slices, using a sharp knife. You can use a mandolin slicer, but  I personally like to slice cucumbers with a knife.

Step 4

 Place cucumbers in a colander over a bowl.

Step 5

 Sprinkle some salt over the cucumbers and let it sit over them for 5 minutes.

Step 6

Next dry the slices between two paper towels. This is an important step so that your cucumbers don't get soggy.ucumbers

 Place cucumbers in a bowl.

Step 8

 Season with salt, olive oil and apple cider vinegar. Add the dill and stir to combine.
