For the salad: – 12 oz baby spinach – 12 oz sliced strawberries – 1 cup walnuts – 1/2 cup crumbled feta or blue cheese For the light balsamic vinaigrette dressing: (Use either dressing, nutritional info does not include the dressing) – 1/4 cup olive oil – 3 tbsp light balsamic vinegar – 2 tsp honey — or low-cab sweetener – 1 tsp Dijon mustard – 1/4 tsp salt – pinch of black pepper For the poppyseed dressing: (Use either dressing, nutritional info does not include the dressing) – 1/2 cup olive oil — can swap some of it with MCT oil for Keto – 1/4 cup apple cider vinegar – 1/4 cup honey — sugar or low-carb sweetener – 1 tsp Dijon mustard – 1/8 tsp salt – 1 tbsp poppy seeds
